Free Range Fried Chicken

Home made Free Range fried chicken! I beg of you to do one thing and that is to never buy fast food again for your own good and health. Just make it yourself! There is something to be said about making your own food, it is just healthier. Try the below recipe for crispy fried chicken, add or remove spices to suit your taste, experiment!

Free Range Fried Chicken

Real fried chicken! If you crave the tale away stuff but want to be healthier – at least make it yourself and use real free-range chicken? This is my recipe, but add or remove spices as you see fit – you will eat it not me.

Ingredients

  • 500 g Chicken breast or thigh deboned and cut into strips
  • salt and pepper
  • enough cooking oil for shallow deep frying
  • 1 tbsp smoked paprika be generous
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp coriander
  • 1 tsp cumin
  • 1/2 tsp chili powder optional – or add more if you like it hot
  • 3 eggs
  • 6 tbsp flour
  • 4 tbsp polenta

Instructions

  • Place the chicken in a bowl, add salt and pepper plus all the spices and mix thoroughly. Cover and let marinste for at least 30 minutes but I suggest overnight
  • Beat the eggs and add to the marunated chickem coating thoroughly – this is important
  • Separately, mix the flour, polenta, salt, pepper and keep the bowl near your stove
  • Place your pan on the heat, medium high heat and add the oil.
  • when the oil is ready, add peice by peice, chicken to the flour and coat generously before adding it to the oil. you will have to do this in batvhes
  • Shallow fry fr roughy 2 minutes per side – or until crispy and golden
  • Remove to a plate with paper towels to drain as muc oil as possible

Notes

Be careful of the oil splashing!
I prefer chicken thigh meat – as i just personally think it’s the best part of the chicken. Feel free to use this method for wings and drumsticks, you will need more of everything though and this method is slightly healthier – using less oil.
