- Mixing bowl
- Sharp knife

Ingredients
- 1-1.5 kg lamb ribs
- 3 tbsp olive oil
- 4 tbsp honey
- 3 garlic cloves, minced
- 2 tbsp soy sauce (or Worcestershire for a local twist)
- 1 tsp smoked paprika (optional)
- Salt & black pepper, to taste
Instructions
- Preheat oven to 160 °C (320 °F).
- Prepare ribs: Place ribs on a baking tray lined with foil. Rub with olive oil, salt, pepper, and paprika.
- Slow roast: Cover with foil and bake for 2 hours until tender.
- Make glaze: In a bowl, mix honey, garlic, and soy sauce.
- Glaze & finish: Remove foil, brush glaze over ribs, and return to oven at 200 °C (390 °F) for 15–20 minutes until sticky and caramelised.
- Serve: Slice between bones and enjoy with a fresh salad or roasted potatoes.
