Karoo Lamb is also naturally free range. The sheep are forced to forage by walking distances eating the fynbos. It is said 1 sheep needs 4 hectares of land. This, coupled with the fynbos diet make for a very herby taste which is unique.

Lamb rump is an individual muscle cut from the hind leg. When roasted and rested, it is very tender with a lot of flavour. There is a layer of fat and skin on the top which crisps up beautifully when cooked.
