Rack of Lamb is very popular these days, probably because it looks very impressive, generally a show stopper, but also packed with incredible flavour and tenderness. A truly delicious cut but it must be said Karoo lamb takes it to a new level.
Packaged: French trimmed with offcuts/bones/fat/trimmings included which you can use at home for broths/stocks etc. Total weight including this, is 800g. The rack without the trimming is roughly 550g and the balance is trimmings.
