The Texas-Style Smoker: Trim any excess surface silver skin, leaving a thin layer of top fat. Coat generously with a coarse dalmatian rub (equal parts sea salt and black pepper). Smoke bone-side down over oak or hickory at 110°C (225°F) for 6 to 8 hours. Spritz with apple cider vinegar every hour after the bark sets, and pull when a meat thermometer glides through the meat like soft butter (around 95°C / 203°F internal).

Oven-Braised Comfort: If you don’t have a smoker, sear the whole rack in a large roasting pan. Pour in a rich bath of red wine, beef stock, garlic, and fresh thyme. Cover tightly with heavy-duty foil and braise at 140°C for 4 to 5 hours until the meat effortlessly pulls away from the bone.
