The Ultimate Showstopping Centerpiece for Low & Slow Perfection (Whole Shin)

Make an unforgettable statement at your next gathering with the Kalahari Wild Beef Thor’s Hammer. This legendary cut is a whole, bone-in beef shin that has been masterfully French trimmed—a culinary technique where the meat is cleanly scraped away from the top half of the shank bone, leaving a massive, exposed handle. When stood upright on the smoker or in a large roasting pan, the massive bundle of richly marbled meat at the base perfectly mimics the iconic weapon of the Norse god of thunder.

Sourced from 100% grass-fed cattle that roam freely across the expansive Kalahari plains, this exceptional cut benefits from a meticulous 21-day dry-aging process. Dry aging concentrates the natural, complex beef flavor while breaking down the muscle enzymes. Because the shin is a hard-working muscle group packed with connective tissues and a rich marrow core, the combination of dry-aging and slow cooking yields an unbelievably gelatinous, pull-apart texture that floods your palate with rich flavor.

Why You’ll Love It:

Showstopping Presentation: The ultimate conversation starter for any braai master, smoker enthusiast, or dinner host.
21-Day Dry Aged: Elevates the natural, grass-fed beef profile to a deep, intensely savory flavor while dramatically improving tenderness.
Rich in Collagen & Marrow: As it cooks slowly, the rich connective tissues melt into pure gelatin, naturally basting the beef and creating a rich sauce base.
100% Grass-Fed & Free-Range: Ethically raised on the untamed Kalahari plains, completely free of routine antibiotics or growth hormones.

Delivered Frozen. Weight: 1.5kg

Cooking Inspiration:

Thor’s Hammer is explicitly built for the patience of low-and-slow cooking, requiring a few hours to transform into melt-in-your-mouth perfection:

In the Smoker: Rub generously with a coarse salt and black pepper brisket blend. Smoke it upright at 110°C (225°F) over oak or pecan wood for 4–5 hours until a beautiful dark crust (bark) forms. Spritz occasionally, then tightly wrap it in foil or butcher paper with a splash of beef stock or beer, and continue cooking until the internal temperature hits roughly 95°C (203°F) and the meat is fork-tender.
Slow-Braised in the Oven: Sear the meaty base in a large, heavy pot until golden brown. Stand it upright, surround it with aromatic root vegetables, red wine, and rich beef stock, cover tightly, and braise at 140°C for 5 to 6 hours until the meat effortlessly pulls away from the bone.
