Kalahari Wild Beef 35-Day Dry Aged Sirloin Steak (Boneless)
Sleek, Sublimely Tender, and Intensely Savory
For those who crave the perfect balance of pure steak texture and rich, beefy flavor, our Kalahari Wild Beef Boneless Sirloin is a masterclass in artisanal butchery. Sliced thick from the prime loin with the bone carefully removed, this classic cut features a tight, fine grain and a thick top cap of natural fat that renders down into pure flavor during cooking.
Sourced from 100% free-range cattle raised on the pristine pastures of the Kalahari, this grass-fed beef is aged for an extended 35 days in our specialized drying chambers. As excess moisture gently evaporates, the steak’s natural flavors become wonderfully concentrated. Meanwhile, active enzymes naturally break down the muscle structure, producing a Boneless Sirloin with an incredibly tender bite, a caramelized fat edge, and a complex, nutty depth that wet-aged steaks simply cannot match.
Cooking Inspiration:
A boneless sirloin shines brightest when given a high-heat sear to crisp up its iconic fat cap:
-
The Perfect Skillet Sear: Bring the steak to room temperature 30 minutes prior to cooking and season generously with coarse sea salt. Using tongs, stand the steak upright on its fat edge in a smoking-hot skillet to render the fat until crisp and golden. Lay the steak flat and sear for 2 to 3 minutes per side for a deep, mahogany crust.
-
Baste & Rest: Add butter, crushed garlic, and a sprig of fresh rosemary to the pan in the final minute, spooning the foaming butter continuously over the top. Pull from heat at medium-rare (52°C–54°C) and allow it to rest for 6 to 8 minutes before carving across the grain.
