Kalahari Wild Beef 35-Day Dry Aged T-Bone Steak
Two Legendary Cuts, One Outstanding Steak
Widely celebrated as one of the best steaks in the country, the T-Bone is the undisputed heavyweight champion of the butcher’s block. It offers the ultimate culinary dual-experience: a tender, buttery fillet on one side of the T-shaped bone, and a deep, beefy sirloin on the other.
Sourced from 100% grass-fed cattle that roam the vast, mineral-rich Kalahari plains, this exceptional cut benefits from an extended 35-day dry-aging process in our specialized climate-controlled chambers. Over these 35 days, natural evaporation concentrates the beef’s natural sugars, fats, and proteins, while native enzymes gently tenderize the muscle fibers. The central bone acts as a natural heat conductor and moisture shield during cooking, allowing the delicate fillet and robust sirloin to cook in harmony. The result is a steak of extraordinary tenderness, characterized by an intensely rich, nutty, and savory flavor profile that stands alongside our famous Ribeye at the apex of South African beef.
Cooking Inspiration:
Because the fillet side cooks faster than the sirloin side, careful heat management over high heat brings out this steak’s absolute best:
-
Mastering the Braai: Bring the T-bone to room temperature and season liberally with coarse sea salt. Position the steak over hot coals, placing the thicker sirloin side closer to the direct heat and the tender fillet slightly further away. Sear for 3 to 4 minutes per side, turning carefully, until a rich, caramelized crust forms.
-
Pan-Seared & Butter Basted: Sear in a piping-hot cast-iron skillet. Render the fat edge first, sear both flat sides, then toss in double-cream butter, crushed garlic, and fresh thyme, constantly spooning the foaming butter over the bone. Aim for medium-rare (52°C–54°C) and rest for a full 10 minutes before carving to allow the juices to settle.
