Mortadella is a large Italian sausage or luncheon meat made of finely hashed or ground heat-cured pork, which incorporates at least 15% small cubes of pork fat. It is traditionally flavoured with black pepper grains.
Ryan Boon Specialty Meats made using their traditional brine mix. We blend our own range of spices and herbs with the best quality salt we can find to create a sweet, flavoursome tasting cure in all our products. We smoke using our own homemade smokehouse outside along the bergriver, where we benefit from the cool breeze and morning mist that settles along it. We cold smoke with freshly chipped beechwood to create a soft and subtle smokiness that lingers well.
