Simple Chicken Livers with Onions

Ingredients

  • 500 grams chicken livers, cleaned and trimmed
  • 2 tbsp olive oil or butter
  • 2 medium onions, thinly sliced
  • 2 garlic cloves, minced
  • 1 tsp paprika (optional)
  • Salt and black pepper, to taste
  • Fresh parsley (for garnish)

Instructions

  • Prep the livers – Rinse, trim off excess fat, and pat dry with paper towels.
  • Cook the onions – Heat olive oil/butter in a pan over medium heat. Add sliced onions and sauté until golden and soft (about 8–10 minutes). Remove and set aside.
  • Sear the livers – In the same pan, add the chicken livers. Cook on medium-high heat for 2–3 minutes per side until browned on the outside but still slightly pink inside (do not overcook, or they’ll turn tough).
  • Add flavor – Add garlic, paprika, salt, and pepper. Stir well for 1–2 minutes.
  • Combine – Return the onions to the pan and mix everything together for a final 1–2 minutes.
  • Serve – Garnish with fresh parsley and enjoy with crusty bread, rice, or pap.
