Crispy, juicy, and packed with flavour—these garlic & herb roasted chicken thighs are the kind of effortless dinner that feels gourmet.

Equipment

  • Baking tray or oven-safe dish
  • Mixing bowl (for seasoning)
  • Tongs or spoon (for coating)
  • Oven

Ingredients

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp fresh/dried rosemary
  • 1 tsp fresh/dried thyme
  • Salt & freshly ground black pepper (to taste)

Instructions

  • Preheat your oven to 200 °C (400 °F).
  • Season: In a bowl, mix olive oil, garlic, herbs, salt, and pepper. Toss chicken thighs until evenly coated.
  • Roast: Place thighs skin-side up on a tray. Roast for 40–45 minutes until the skin is golden and the meat is cooked through.
    Tip: Use a wire rack for better air circulation and crisper skin.
  • Rest & Serve: Let chicken rest for 5 minutes before serving.
