Roast Tikka Chicken Quarters
A very easy and simple way to add taste to your roast

- 2 Chicken Quarters 2 'guns' - thigh and drumstick joined
- 2 tbsp Tikka Curry Paste or Sauce
- Salt and Pepper
Preheat oven to 180°C
Place your quarters in a roasting tray
Season with salt and pepper
Add the tikka paste, rubbing all over the chicken and making sure you reach all the little nooks and crannies. You can make a call here and see if you think you need to add more paste or not. This dish works well with Harissa paste too.
Place in the oven for 45 minutes. Test it is cooked by gently peicing a whole in the chicken with a sharop knife, and if the juices run clear - you ready!
Serve with pretty much any sides you wish like home made french fries
This is a perfect Monday night meal that is so easy and quick. Plan ahead, as it does need up to an hour in the oven, but your prep time is 5 minutes if that.
Whatever you decide to have as sides, make sure you time it well so that when you start cooking your sides, you finish at the same time as the chicken.
