Cooking oil
Salt and pepper
3Lamb Rib Chopsroughly 250g
1knobButter
Instructions
Make sure the meat is room tempreture before cooking
Season with salt and pepper all over, be sure to get salt on the fat this will help it crisp up
Get the pan hot with oil, medium high heat.
The first thing to do is to place the chops, all 3, fat side down using your tongs on each end to keep it upright. Give it a minute, this should be enough to crisp up the fat
Rememebr I am a meat thermometer guy, roughly fry each side of the chops for 3 minutes but use the thermometer to get it perfect the way you prefer. I like my chops medium o well - definitely not well done
