Karoo Lamb Chops - Karoo Meat of Origin

Plain and simple... the way Karoo Lamb chops, naturally free range chops, should be.

Ingredients

  • Cooking oil
  • Salt and pepper
  • 3 Lamb Rib Chops roughly 250g
  • 1 knob Butter

Instructions

  • Make sure the meat is room tempreture before cooking
  • Season with salt and pepper all over, be sure to get salt on the fat this will help it crisp up
  • Get the pan hot with oil, medium high heat.
  • The first thing to do is to place the chops, all 3, fat side down using your tongs on each end to keep it upright. Give it a minute, this should be enough to crisp up the fat
  • Rememebr I am a meat thermometer guy, roughly fry each side of the chops for 3 minutes but use the thermometer to get it perfect the way you prefer. I like my chops medium o well - definitely not well done
  • I know this is not a fancy or a complicated recipe with 100 ingredients but thats the point... sometimes the beauty of meat is to leave it as is and enjoy the taste if the meat - Karoo Lamb is perfect for this
