Place the chicken in a bowl, add salt and pepper plus all the spices and mix thoroughly. Cover and let marinste for at least 30 minutes but I suggest overnight
Beat the eggs and add to the marunated chickem coating thoroughly - this is important
Separately, mix the flour, polenta, salt, pepper and keep the bowl near your stove
Place your pan on the heat, medium high heat and add the oil.
when the oil is ready, add peice by peice, chicken to the flour and coat generously before adding it to the oil. you will have to do this in batvhes
Shallow fry fr roughy 2 minutes per side - or until crispy and golden
Remove to a plate with paper towels to drain as muc oil as possible
