Chicken with Paprika and Chorizo

Ingredients

  • 1.5 Chicken pieces We strongly suggest drumsticks and thighs only
  • Salt and pepper
  • 2 tins Chopped tomatoe 400ml cans
  • 2 tbsp Olive Oil
  • 6 Baby potatoes cut in half
  • 1 tbsp Oregano (dried) Thyme will also do
  • 2 Onions roughly chopped
  • 1 tbsp Paprika Smoked
  • 150 g Chorizo Sliced
  • 2 cloves garlic fibely chopped
  • 1 Red Bell Pepper Sliced into strips
  • 1 Yellow Bell Pepper Sliced into strips

Instructions

  • Season the chicken with Salt and Pepper to taste
  • On a higher heat, heat the oil in the potjie and brown the chicken. Remove the chicken and set aside
  • Lower the heat by removing some coals. Add the onions and fry till soft
  • Now add the chorizo, oregano, peppers, paprika and garlic. Fry for about 5 minutes. Thsi is usually my favourite part when I love to take whiff - heavan!
  • Add the potatoes and chicken. Now add the tomatoes and give it a stir to mix ingredients together.
  • Cover with the lid and simmer for roughly 90 minutes. If after 90 minutes you find it is too watery, you can add a little flour. Or, if you find it too dry - you can stock, water or even light red wine.

Notes

You can use Green Peppers if you wish. Instead of potatoes you could also use rice instead, cooked separately. 
Keep the heat low for the potjie, only need occasional bubbling. If you find it is it cooked through just keep it going a bit longer.
