Season the chicken with Salt and Pepper to taste
On a higher heat, heat the oil in the potjie and brown the chicken. Remove the chicken and set aside
Lower the heat by removing some coals. Add the onions and fry till soft
Now add the chorizo, oregano, peppers, paprika and garlic. Fry for about 5 minutes. Thsi is usually my favourite part when I love to take whiff - heavan!
Add the potatoes and chicken. Now add the tomatoes and give it a stir to mix ingredients together.
Cover with the lid and simmer for roughly 90 minutes. If after 90 minutes you find it is too watery, you can add a little flour. Or, if you find it too dry - you can stock, water or even light red wine.
