Make sure meat is at room tempreture
Pre Heat the Oven to 160°C
On the hob, heat the oil in a flat bottomed pot and sear the meat until brown. Remove and set aside.
Now fry the onions until soft, then add the meat back
Add the garlic, tomato paste, beer, herbs and stock cube - give it a good mix
Place in teh oven and cook for 2 hours.
Add the carrots and place back in the oven for another hour.
About 30 minutes to go, gauge to see if its too watery of if running dry. If too watery just add very little flour and mix quickly, or if running a bit dry, add a little water. If its perfect just leave to cook.
When the meat falls off the bone and is nice and tender.
When serving sprinkle the chopped parsely over the final dish
