Duck Breast with Peaches

Ingredients

  • 4 Large Duck Breasts
  • Salt and Pepper
  • 4 Shallots - minced
  • 6-8 Peaches, peeled, pitted and quarterd

Instructions

  • First, score the duck breasts fat side without piercing through the fat.
  • Season with salt and pepper and be sure to rub the salt into the cuts - which will help give a crispy and crunchy skin
  • Put the breasts in anon stick skillet on high heat for 2 minutes. Fat side down. reduce heat to medium
  • After 5 minutes, pour out a little of the fat, then put the pan back on the heat and add the peaches. Stir - make sure the peaches get all fat
  • After a total of 10 minutes cooking flip the duck breasts and cook for 1 minute
  • Remove from the heat and the pan, and let cool for 5 minutes before serving with the peaches
