Meat from the tail gets filleted on site at Le Bonheur, and then it gets sent off to Van der Kooij Slaghuis in Paarl, where it gets smoked, sliced and packaged in 80gr vacuum sealed packages. It’s a lovely white meat, full of protein and low in cholesterol, and lower in sodium than beef or chicken. It is believed that it helps with asthma and coughing problems.
A tender lean meat, brined and cold-smoked using fruit woods, and thinly sliced for your enjoyment. Ready to eat. This carpaccio must be kept frozen, but pop it into a basin of water, and you will find it defrosted in less than two minutes, and ready to serve.
