The idea of cooking with fruit can seem odd to some, but it is just the perfect companion with Duck. Duck breast is rich and luxurious and fruit cuts through the richness a bit and gives the dish some balance.
Duck Breast on its own is a great dish if you feel you do not want the sweetness of the fruit.
Duck Breast with Peaches
Ingredients
- 4 Large Duck Breasts
- Salt and Pepper
- 4 Shallots – minced
- 6-8 Peaches, peeled, pitted and quarterd
Instructions
- First, score the duck breasts fat side without piercing through the fat.
- Season with salt and pepper and be sure to rub the salt into the cuts – which will help give a crispy and crunchy skin
- Put the breasts in anon stick skillet on high heat for 2 minutes. Fat side down. reduce heat to medium
- After 5 minutes, pour out a little of the fat, then put the pan back on the heat and add the peaches. Stir – make sure the peaches get all fat
- After a total of 10 minutes cooking flip the duck breasts and cook for 1 minute
- Remove from the heat and the pan, and let cool for 5 minutes before serving with the peaches
